How it's made | The olive oil Comincioli Number One is made exclusively with unpitted Leccino and Casaliva olives and eight other local varieties. This olive oil, with its peculiar fragrance verging to bitterness, is obtained from a selection of the olives, which will be then separated and put together again in the oil. The harvest is, so, the first and most important stage, which can be carried out also by hand. Milling then takes place, where the pit is separated from the fruit. Another important process is when the olive paste is perfectly mixed, called 'gramolatura'. Afterwards, the olives are pressed and squeezed. The olive oil is then filtered and purified. Finally, the oil is left to rest in order to allow it to refine properly. |
