How it's made The extraction and production process of the olive oil starts with the picking of the olives, carried out by hand or with special machines. The olives are then put in well-aired boxes, which preserve the flavour of the olives and protect them from possible moulds. From the field, the olives are brought to the mill. Different steps are carried out, such as the pressing and the 'gramolatura' where the pit is removed from the olive. Finally the olive oil is filtered again from the impurities of the olive paste and then gently mixed. After a necessary resting time, the olive is bottled and released on the market.
