Elena Walch Pinot Noir is a wine made from Pinot Noir grapes in the estates of the famous winery Elena Walch in Alto Adige. In this territory and with this particular climate Pinot Noir express himself very well compared to other italian wine areas. Pinot Noir grapes are manually harvested around the middle of September and taken to the cellar for de-stemming, fermentation with maceration takes place in stainless steel tanks for about 10 days during which repeated pump over ensure a good extraction of coloring substances, polyphenols and aromas from the skins to the wine. After fermentation, Elena Walch Pinot Noir wine is separated from the skins and placed in ageing: partly in steel and partly in large oak barrels until blending and bottling.
