Beyond The Clouds is a wine made with Chardonnay grapes (main grape variety) and other white grapes grown in the Elena Walch estates. All grape varieties are harvested on the same day, which coincides with the full ripeness of the Chardonnay grapes. This variety will then be complimented with the aromas and bodies of the other grapes. After the pressing, musts ferment in oak barrels and batonnage is carried out weekly for 3 months. Wine is aged in barrels for additional 7 months and then assembled and bottled.
