The ancient recipe for black cubaita was brought to Sicily by the Saracen people, the Arabs mixed almonds with sugar and honey to make qubbayt, a name the Sicilians later changed to cubaita. The recipe has remained almost identical, the Sicilian confectioner Angelo Inglima has created multiple variations of the cubaita: white cubaita, white and black cubaita, black cubaita. Thunder quality almonds, Bronte pistachios, Sicilian honey and sugar form the heart of a crunchy sweet with a unique flavour.
