The seasoned bacon of the Rossi salumificio is produced with the belly of the pig, with its skin (rind), is trimmed, salted, spiced. It is rolled and tied before being dried. It is then matured for a few months in our cellars. The product obtained is a bacon characterised by the sweet aroma of an old recipe, great softness and delicacy thanks to the vein of noble white fat.
