The Coppa Ferrari is the flagship of the Parmesan company, in fact it is almost entirely handmade. Only the best strictly Italian pigs are chosen. For the production of the coppa Ferrari, the parts of the muscle of the upper cervical region are selected and degreased. The sausage is cylindrical in shape, weighing up to 2.6 kg when cut, it has a fragrant and intense perfume typical of cured meat. The aromatic intensity and persistence on the palate increases in this salami as it matures for a minimum of 30 days to several months. It is excellent eaten with other typical Parmesan cured meats such as raw Parma and culatello.

How it's made | The muscles of the upper cervical part are chosen. Once the meat has been cut, it is salted using the dry salting method. The Parma salami is placed in special salting cells. At the end of the salting process, the salami is placed in a beef casing and tied by hand with hemp twine. The seasoning follows for a minimum of 60 days, during this period the meat dehydration takes place with a consequent increase in flavour and taste. |
