Colle dei Pastini Rosso Molise DOC Cantina San Zenone

The Molise Rosso DOC is simply a 100% Montepulciano d'Abruzzo in Purezza (until few decades ago, Molise and Abruzzo were one region), but it is not possible to call it like this since the two regions were divided. San Zenone winery produces this basic red wine Colle dei Pastini suitable for any wine-lovers. It is a wine that is easy to drink, clean, fresh and fragrant with typical features of the Montepulciano variety, that in this region is mostly trained with the 'tendone' system. It has been proved that, even with a high number of stumps per hectare and with this type of vine training system, it is possible to obtain a great product characterised by a good concentration, high amount of sugar and polyphenols. This variety is traditional from Molise and it is planted all over the region, both on the Adriatic coast , like in this case, and on the Apennines. San Zenone winery lets this wine macerating for only a week at a low controlled temperature, around 23°C, in order to extract from the grapes its fresh and fragrant notes of red fruit. After racking, the wine is refined in steel tanks for about one year, where the wine become more mature, carries out the malolactic fermentation and then ages for a year before bottling.
