One of the most well-known and planted varieties in Molise is the international variety Cabernet Sauvignon that here takes the name of Molise Rosso Cabernet Sauvignon Colle dei Pastini DOC: San Zenone winery decided to produce only wines made with one single grape variety and that is why we have this great, traditional wine, aged in steel for 2 years. Cabernet's training system is the guyot, the perfect method for this variety on this land. The harvest takes place when the grapes are fully ripened in order to avoid that the pyrazines (typical aromas of pepper in the Cabernet) will prevail on the flavours of the wine, while a great balance actually characterizes this wine. Maceration lasts about 18 days and the fermentation is carried out at a controlled temperature at around 24°C in order to contain the extraction of bitter tannins and to improve the aromatic profile of the wine. Afterwards the wine ages in steel for 2 years, the malolactic fermentation is carried out and during the refinement the wine gest softer and ready to be consumed. After two years the Cabernet Sauvignon, that is now soft and not sharp, is bottled.
