Chianti Rufina Organic I Veroni is a wine produced with Sangiovese, Canaiolo and Colorino vineyards in the Chianti Rùfina vineyards near Pontassieve, just up the city of Florence at an altitude of about 250 m sldm. The grapes are harvested separately and taken to the winery for fermentation in thermocontrolled steel tanks. During maceration and fermentation, numerous pump-over and delestages are repeated to extract polyphenols and aromatic compounds from grape skins. Subsequently, the Chianti Rufina Organic I Veroni is separated from the skins and aged for 12/14 months in large Slavonian oak barrels before blending and bottling. Prior to release the Chianti Rufina Organic I Veroni remains in the bottle for 6 months.
