Chianti Classico Badia a Passignano is produced in the homonymous Antinori family estate located 3 km south of the famous Tignanello estate. Chianti Classico Badia a Passignano is a 100% Sangiovese whose grapes are manually harvested around mid-September. Once in the cellart a sorting operationt of the bunches was performed on a vibrating table so only the highest quality Sangiovese will be vinified. The fermentation runs out in about 10 days at a temperature of 28 ° C and maceration continues for another 10 days during which the wine is further enriched in polyphenolic and aromatic compounds from Sangiovese skins. Then the wine is separated from the skins and placed in oak barrels for malolactic fermentation and the future aging of 14 months. At the end of this period the wine is blended and bottled, before entering the market Chianti Classico Badia a Passignano ages in the bottle for 12 months.
