How it's made Freshly milked milk is placed in basins and whey starter is added. The milk is then placed in copper vats, heated and natural rennet is added. Once the curd is obtained, it is cut by hand, followed by raising the temperature for cooking. The cheese is then placed in moulds. Only those cheeses that are suitable for various controls will become Sovrano di Bufala and will be coloured white.
