Chardonnay Sanct Valentin Alto Adige DOC comes from the best plots of Chardonnay in the vineyards of the municipality of Appiano located between 450 and 550m above sea level. The Chardonnay vineyards are between 10 and 32 years old and are therefore in the perfect age to produce wines of extraordinary quality. The grapes are harvested by hand in mid-September and fermentation takes place in oak tonneaux. In the same containers, the Chardonnay Sanct Valentin Alto Adige DOC wine undergoes malolactic fermentation and aging, which lasts for about a year before blending, after which Chardonnay Sanct Valentin Alto Adige DOC remains in steel vats for 6 months before bottling.
