The Castelmagno mountain cheese is a typical Piedmontese cheese, originally from Val Grana. The Castelmagno PDO of mountain is produced all year with milk coming from the pastures on the hill so the cheese is unique and tasty, with an aroma of hay, tending to vegetable and raw milk. The color is white but with the continuation of the seasoning it tends to become yellow, the dough has some holes, it is granular and straw-yellow in color. The Castelamagno is refined by the dairy for at least 120 days, the unique atmospheric conditions mean that the cheese can season both aromatically and tastefully. How it's made | The Castelmagno mountain cheese is produced with cow's milk obtained from two consecutive milkings, sometimes added. To the milk, veal rennet is added, it is brought to a temperature ranging between 35 ° C and 38 ° C. After the curd has broken, the mold is pressed and wrapped in a dry cloth, hung and finally placed in special containers.
