Castelmagno PDO cheese is a typical Piedmontese cheese, originating in the Grana Valley. Castelmagno PDO mountain cheese is produced all year round with milk from pastures that allow the cheese to be tasty and unique, with an aroma of hay with vegetable flavours, produced with raw milk. The colour is snow-white but tends to turn yellow as the cheese matures. The paste has a few holes, is grainy and straw-yellow in colour. Castelmagno is aged by the dairy for at least 120 days, the unique atmospheric conditions allow the cheese to mature both aromatically and taste-wise. An excellent cheese to be enjoyed as a whole, its aroma is reminiscent of officinal herbs, and depending on its maturity we recommend matching it with full-bodied wines.
