Castelbelbo is a semi-seasoned soft cheese made from cow's milk, sheep's milk and goat's milk. Castelbelbo cheese is produced by the Altalanga dairy in Piedmont. A single cheese, it has an edible crust of white color, and a white colored paste, which matures with a straw yellow color. Castelbelbo is an aromatic cheese with a milk flavor and balsamic hints and cut grass. Excellent cheese to be consumed in purity.
