Cannonau di Sardegna DOC Costera Argiolas

Costera Argiolas is a wine made with traditional Sardinian red grapes: Cannonau, Bovale and Carignano. The vineyards are located in the areas of Sarai and Sisini at an elevation of 220m asl and they are characterized by calcareous and clay soils. The harvest is carried out during the very first hours of the day and the grapes are brought to the winery for the de-stemming. The fermentation lasts around 10-12 days at a temperature of 28-30°C and frequent 'rimontaggio' process is carried out to extract the polyphenols and aromas from the skins and put in vitrified concrete tanks where the malolactic fermentation takes place. Afterwards the wine refines in oak barrels for 8-10 months before bottling and releasing.
