The peculiarity of this cheese is its ageing, which takes place in the underground cellars in the town of Biella, Piedmont. Its texture is soft and creamy, its colour is white, typical of goat cheeses. Its taste is savoury and delicate, with a long aftertaste. Its weight is around 600 gm.

How it's made | Fresh milk is heated until it reaches 34-35°C (93-95°F). It gets inoculated with milk starter cultures and added to the rennet. The curd is cut in 5-10 cm cubes and then a second cut takes place until it reaches the size of a hazelnut. The texture is extracted and laid in moulds. Ageing takes place in the traditional Biella's underground cellars. During the ageing, the rind is washed with water and salt. |
