Ca del Bosco Cuvee Prestige is the wine that represents Ca del Bosco in the world. According to Ca del Bosco Method Pinot Noir and Chardonnay are cataloged by vineyard and cooled in a cold room, washed from impurities in a soaking tubes system, conveyed in a drying tunnel, selected by expert hands on a sorting table and conveyed to the press. Pressing is performed in a protected oxygen free atmosphere in order to avoid oxididation of phenolic and aromatic components in the must. Just the first few pressings are used for the cuvee Annamaria Clementi that are moved without the use of pumps, but by the gravity force through the use of tanks / elevator that standing up allow the handling of the must / wine. Must selections for Cuvee Prestige ferment in steel tanks for 15 days at 17°C and then is blended with a 20% of riserva wines of previous vintages to impress Ca del Bosco style every year. Once blended the wine is bottled with the addition of yeast and sugar and put to rest for about 25 months. After disgorgement Ca del Bosco Cuvee Prestige is labeled and marked uniquely for traceability.
