Brunello di Montalcino vineyard Manachiara is a wine that comes from a particular cru located at 300 m asl and with an ideal south-east exposure. In this vineyard the grapes can reach a perfect level of ripeness creating wines with very peculiar aromatic features. The Sangiovese by Manachiara is hand-harvested around the middle of September, vinified separately in temperature controlled steel tanks. The alcoholic fermentation lasts about 15 days at a temperature of 28°C while the maceration on the skins lasts for 7 days more, in order to enrich the wine with the polyphenols from the skins and seeds. Afterwards the wine is separated from the skins and put to age in French oak barrels for 18 months and then for other 12 months in Slavonia oak barrels. The next step is blending and bottling, bottle ageing is carried out for 2 years before releasing.
