Brunello Pieve Santa Restituta 2010

Brunello di Montalcino Pieve San Restituta is a result of the blending of different Sangiovese grapes grown in the highest areas of the Sugarille and Rennina crus and in the 10 hectares of Sangiovese in Torrenieri. These Sangiovese are harvested in different times depending from the level of ripeness of the grapes. The company's decision is not to bottle the wine if that particular vintage is not up to their high-quality standards (therefore there are no Pieve San Restituta wines in 2002 because of the excessive rainfalls, and in 2003 for the extreme heat). The wine, brought to the winery, are de-stemmed and put in steel tanks for the alcoholic fermentation with maceration that lasts around 15 days at a temperature of 25-28°C. Afterwards the wine is separated from the skins and then put to age in oak for 24 months, 12 of which in barriques and the rest in bigger barrels, before blending and bottling.
