Bricco dell'Uccellone is probably the wine that best represents Braida. It is an interpretation of the Barbera wine but with 'international' features. It is a wine that needs to be in all wine-lover's cellar. This Barbera is hand-harvested, destemmed and left in steel tanks at a controlled temperature of 30°C for 20 days where the maceration with skin contact takes place transferring all the significant compounds of the grapes. At the end of this period of time, the wine is separated from the skins and left to age in oak barrels for 15 months. After one year of bottle ageing, the wine is released on the market.

Terroir The Bricco dell'Uccellone is a vineyard with peculiar features. Its grapes are used to make only 100% Nebbiolo wines. The wine name Bricco dell'Uccellone ('big bird') comes from the lady who used to live close the vineyards and since she was always dressed in very dark clothes she was named the uselun which in Piedmont dialect means 'big bird'. The vineyard is located in Roccehtta Tanaro where soils are of medium-texture with a composition of sand and clay. From these soils wines with strong aromas and flavours are obtained compared to those from coarse-texture soils. The training system is trellis with guyot pruning and vine density is 5000 stumps per hectare.

Bricco dell'Uccellone is a full-bodied wine with a good acidity that makes this wine easier to drink. For this reason it is excellent with red meat and gamey dishes, even spiced or elaborate dishes. It is also suggested to enjoy it together with long-aged cheeses.
