The Bresaola di Magatello is one of the most famous cured meats, made in Valtellina with the finer parts of the animal, such as the topside ('magatello'), obtained from the muscle fibres of the beef leg. The bresaola di Magatello is recognisable from its unique and unmistakable taste and it is synonymous with freshness and quality. It is homogeneously compact, red and famous for its healthy and lean meat with high protein content and even recommended for diets. It is also possible to find a spiced version, which is also characterised by the same quality and tastiness, that are both features of a fine and high-quality product.

How it's made The production continues with the spreading of cooking salt, spices and other aromas, soaked in specific tanks at high temperatures. They stay like this for about two weeks, allowing the meat to obtain its flavours. Finally, the meat is pressed and put in natural casings and hung in specific cells to allow the drying and curing to take place for a period of time between 4 and 8 weeks. This is a very intense process that allow the aromas and salt to merge with the meat, delivering a unique and delicate flavour.
