How it's made | The production continues with the spreading of cooking salt, spices and other aromas, soaked in specific tanks at high temperatures. They stay like this for about two weeks, allowing the meat to obtain its flavours. Finally, the meat is pressed and put in natural casings and hung in specific cells to allow the drying and curing to take place for a period of time between 4 and 8 weeks. This is a very intense process that allow the aromas and salt to merge with the meat, delivering a unique and delicate flavour. |
