The Piennolo cherry tomato is Slow Food certified product; these tomatoes are picked and then left to fully ripen while hanging in bunches from walls or beams in a dry place. The 'fresh' tomato can be consumed for almost an entire year thanks to its thick skin.
How it's made | The Boscaiola sauce is made with the Piennolo del Vesuvio tomatoes, picked when perfectly ripened. They're then washed, blanched and centrifuged with specific machines. The result is a special sauce: sweet, tasty, with a good acidity. The pureed tomatoes are then enriched with porcini mushrooms ad champignon to increase the taste and especially the sweetness of this amazing sauce. Once cooked, the sauce is pasteurized in order to make the product sterile and also to guarantee its freshness during its shelf-life. |
