Blu di Morozzo with chilli is an internationally renowned product. It is one of the blue cheeses also known as blue cheese due to the presence of blue veins of Penicillium roqueforti moulds. Blu di Morozzo is a cheese with a flowered rind, this mould flowering process is favoured by ash processing. Blu di Morozzo cheese with chilli is produced in the province of Cuneo and is made with the use of three different milks skilfully mixed by the cheesemakers, i.e. cow's milk, goat's milk and sheep's milk.
