Bisol Prosecco di Valdobbiadene Crede is a wine made with the second fermentation in autoclave, or also called Martinotti-Charmat method. The grape used is Glera, a variety that has always grown in Valdobbiadene and is charcterised by intense fruity aromas. Grapes are hand-harvested at the end of August and soft-pressed. The musts are inoculated with selected yeasts. The alcoholic fermentation takes place in steel tanks at a controlled temperature of 16-18°C where they stay until blending and before the second fermentation. This wine is then poured in the autoclave where sugar and yeast are added which will create the second fermentation for about 15-20 days, depending on the temperature chosen for this process. All the other processes are carried out isobarically to avoid damage to the bubbles that are created during the second fermentation, that include isobaric pouring, isobaric filtration and isobaric bottling.

Questi suoli sono più adatti alla coltivazione delle varietà Glera e Verdiso che hanno la capacità di non soffrire la siccità nelle estati calde quindi di preservare il patrimonio acidico e aromatico e trasferirlo nel vino. La forma di allevamento utilizzata è la controspalliera con metodologia di potatura a guyot con densità di impianto d 5000 piante/Ha." |
