Beef Rib is a cut similar to the famous Fiorentina; it comes from the loin part as well but it has a bigger bone than the Fiorentina. The real difference is that the sirloin steak is not made up of a fillet and this is because these two cuts are on opposite sides of the animal to each other. A very fine cut, the sirloin steak usually weights less than the Fiorentina, and it is always cooked on the grill with charcoal.
