How it's made | The fillet is in the lumbosacral area of the animal, parallel to the rib below the lumbar vertebras. It is made up of muscles which the animal does not use much. It is cone-shaped. Once the fat and other parts have been removed, the fillet reaches a maximum weight of 4 kg. |
