Polzina is 100% Chardonnay; its grapes undergo a short maceration of the skins in order to extract the flavours. Then the grapes are pressed and must fermentation takes place in steel tanks and a small part in wooden barrels. After a 6-month refinement on the fine lees, the wine is bottled.
