Barone Pizzini Franciacorta Brut is a Franciacorta wine made mostly with Chardonnay grapes grown in vineyards owned by Barone Pizzini winery. It is a Franciacorta wine who wants to represent this kind of wine in the classic and elegant manner, always following the organic production philosophy. The grapes are manually harvested around mid-August and taken to the cellar for a gentle pressing, the musts are made clear with the use of cold and inoculated with selected yeasts. The fermentation of Franciacorta wines takes place in stainless steel tanks at a temperature of about 17 ° C for about 15 days, after this period the wines are aged on the lees until the spring following the harvest up to blending. In this phase called the cuvèe, Franciacorta wines called bases sparkling" are blended and then bottled with the addition of sugar and yeast that will lead the second fermentation inside the bottle allowing the development of bubbles.
