Barolo DOCG Paolo Scavino

The Barolo Scavino is a blend of different crus of Barolo assembled to have a more agreeable balance as possible. The Nebbiolo grapes are manually harvested at perfect maturity and taken to the cellar to be pressed. The crus are vinified separately and they conduct the alcoholic fermentation in inox vats at controlled temperatures without the addition of selected yeasts. Then the wine is separated from the skins and placed in barriques for 12 months, during which the malolactic fermentation take place. After this period the wines are decanted in larger barrels where they remain for other 12 months before being blended and bottled.
