Barbera d'Alba Aldo Clerico is a Barbera wine made in Monforte d'Alba from vines of 40-50 years of age, that means at the height of their potential. In the beginning of October the Barbera's harvest takes place, the grapes are brought to the winery to be de-stemmed and then put in steel tanks, where selected yeasts are added to allow the alcoholic fermentation with skin fermentation to take place. This process lasts for about 12-15 days during which the must turns into wine and get rich in properties of the grape skins and seeds, thanks to the remounting process which is done daily. The wine is separated from the skins and put in barriques and oak barrels for 12-16 months for the ageing. The wines are then blended and bottled. The bottles rest in the cellar for 5 months before being released on the market.
