Dark chocolate was produced for the first time in history in 1879 in Berne by Rodolphe Lindt, and since then it has been one of the irreplaceable elements in confectionery traditions around the world.
It is produced by blending cocoa paste, from the countries of origin, with the addition of ingredients or flavourings. According to an EU directive dating back to 2003, dark chocolate must contain a minimum percentage of cocoa, a minimum of 43%, and cocoa butter, a minimum of 28%, while the cocoa paste, i.e. the dry matter that makes it up, can vary from 55% to 70%.
For the chocolate baba in vasocottura we use only pure dark chocolate and bitter chocolate paste. The vasocottura technique also allows the aroma and flavour of the chocolate to remain intact, keeping the baba soft and fragrant. Preservative-free.
