Amarone della Valpolicella DOCG Telòs

Amarone Telos by the Tenuta Sant'Antonio is a classic Amarone made with an innovative method, which is the vinification without sulphites. Corviva, Rondinella, Croatina and Oseleta grapes are hand-harvested and the bunches are laid in boxes to dry out. This process takes place in well aired rooms with controlled humidity allowing the grapes to dry out without any risk of rotting and to concentrate the sugar and the polyphenols in the bunches, substances that are responsible for the body of the wine. Around the end of December, when the grapes have reacehed the right level of drying, they are pressed and then left to ferment in steel tanks at a controlled temperature for the alcoholic fermentation. Afterwards the wine is separated from the skins and it ages for 6 months in new oak barrels of 5 hl before blending and bottling. The potassium metabisulphite is not added, which is why it is a sulphite-free wine.
