Amarone della Valpolicella Terre di Valgrande is a wine produced by Terre di Valgrande winery in Valpolicella from the vineyards of the Classic Valpolicella and Valpolicella Valpantena wine area. The grapes that compose Amarone Terre di Valgrande are the classic grapes of Valpolicella such as Corvina Veronese, Corvinone, Rondinella that are strictly hand harvested around the end of September and placed in crates for withering. The slow drying process takes place in special places with controlled humidity and ventilation and allows the grapes to dehydrate until lose about 50% of theire initial weight and concentrate the must in coloring substances, polyphenols, sugars and aromas. After about 120 days of drying the grapes are crushed, fermentation with maceration lasts for about 20 days after which the Amarone della Valpolicella Terre di Valgrande is separated from the skins and placed in oak barrels for three years before blending and bottling.
