Amarone Selezione Antonio Castagnedi Tenuta Sant'Antonio is a wine dedicated to Antonio Castagnedi, father Casyagnedi's brothers the owners of the estate. Amarone Selezione Antonio Castagnedi is produced with the drying technique of the typical grapes of Verona as Corvina, Rondinella, Croatina and Oseleta grown in the best vineyards of the estate with an average age of 20-25 years. The grapes are manually harvested around the middle of September and after a very careful selection of the best grapes. The bunches are placed in well-ventilated areas for the drying process. This dehydration process allows the grapes to concentrate sugars and polyphenolic compounds responsible for the strucrure of the wine. After about three months from the harvest the grapes are de-stemmed and fermented in temperature-controlled stainless steel tanks for about 25 days at a temperature of 28-30 ° C. After fermentation the wine is separated from the skins and placed in French oak barrels for 24 months aeging before blending and bottling.
