Amarone della Valpolicella Monte Sant'Urbano is the flagship of Speri winery, it comes from a 19 hectares vineyard named Monte Sant'Urbano in Fiumane, Valpolicella. It 'a vineyard with an excellent exposure at an altitude that goes from 250 to 350 meters above sea level. Monte Sant'Urbano vineyard has a limestone composition that strongly determines the characteristics of the grapes. This cru is harvested in mid-September and the grapes are placed in rooms called fruttai" for drying for about 120 days. In January, when the desired degree of drying is reached begins the production process in the winery for Amarone Monte Sant'Urbano Speri; the grapes are de-stemmed and fermented in stainless steel tanks for 35 days at a temperature of 16-18 ° C during which pumping over and delastage the compounds present in the skins are transferred to the wine.
