Amarone della Valpolicella Ripa della Volta is a wine from the famous Negrar winery in the heart of Valpolicella. Amarone della Valpolicella Ripa della Volta is a wine obtained from the typical grapes of the area that are Corvina, Corvinone and Oseleta, cultivated in the area of the Valpolicella Classica. The grapes are harvested manually around the middle of the month of September and left to dry in small boxes perforated in places called fruttai". These rooms are characterized by controlled ventilation and humidity in order to make the grapes wither and concentrate the sugars, the polyphenols and the aromas contained in the skins. Only in January these dried grapes are vinified to produce Amarone della Valpolicella Ripa della Volta. After the alcoholic fermentation with a long maceration on the skins, the Amarone della Valpolicella Ripa della Volta wine is separated from the skins and placed in aging in French oak barrels for 36 years before blending and bottling.
