The Barbero almond nougat is made with almonds from Puglia first choice. Friable nougat produced only with quality raw materials such as egg albumin, honey and almonds. The nougat is cooked in steam boilers for seven hours, then it is molded, left to dry and cooled and then cut by hand. To make this almond nougat is still used an old recipe that dates back to 1883 in possession of the Barbero family. An excellent nougat to savor in purity, the Puglia almond greatly enriches the quality of this nougat.

How it's made | For the production of Barbero nougat, only 3 ingredients such as albumen, sugar and almonds are used. For the dough, sugar is made liquid, then the egg album previously added is added. Once the dough is added the dried fruit and the nougat is left to cool before being sold and tasted, the noodle cut is done by hand. |
