Brunello di Montalcino DOCG Pian Delle Vigne Antinori

Brunello di Montalcino Pian delle Vigne is made with organic Sangiovese grapes, the Brunello variety, typical of the hill of Montalcino. The grapes are picked when they reach the perfect level of ripeness and then brought to the winery for de-stemming and soft pressing. The must is then put in stainless steel tanks for the fermentation, time length of which can vary according to the year, but it is usually around 3 weeks at a temperature that never goes below 28°C. After this stage, the wine is separated from the skins and after the malolactic fermentation, it is left to age in oak barrels, varying in size from 30 to 8 hl, for 2 years. Next step is the blending of the barrels; the wine is then bottled without being filtered and it rests in the cellar for 1 year before released on the market.
